Can you imagine what vinasse and chilli taste like together? In Hainan Province, there is a specialty named Zaopocu, which literally means vinasse with vinegar. Boil the vinasse with deep-fried garlic, local chilli sauce and some oil, and you have a pot of freshly made Zaopocu. The next step is to add ingredients such as seaweed, beef offals and seafood to the soup. Sour, spicy and appetizing, it also has the aroma of rice wine that lingers in your mouth. For local people, the dish is not only a delicacy, but also a metaphor for life – the assorted flavor is as rich as life itself.
